Lamb chops scottadito
Scottadito translates to "burn the fingers" in Italian, because they're so good you can't wait to tear them apart.
Level
Grown-up leads
Kids cook with a grown-up. Hot ovens, boiling water and frying are grown-up jobs, and sharp knives need a grown-up’s hands too.
Ingredients
Rack of lamb (ask the butcher to cut them into chops)
Salt
EVOO
Lemons
Rosemary or your favorite herb
Hot peppers (if you wish)
Method
Pat your chops dry.
Toss them in a healthy amount of EVOO, salt, lemon and rosemary.
Get your pan nice and hot.
Add the chops to the pan.
Get a nice sear on each side.
Don't overcook them.
Plate them.
Add more EVOO and whatever fresh herbs you have on hand.
And that's it. Enjoy!
