Taralli pugliesi

Taralli are the snack of Puglia, and Dad grew up on them. This was our first try at making them at home, with a twist of love: hearts.

Level

Medium with a grown-up

Kids cook with a grown-up. Hot ovens, boiling water and frying are grown-up jobs, and sharp knives need a grown-up’s hands too.

Bella’s job

Knead the dough and roll the little rings, hearts included. A grown-up handles the boiling pot and the oven.

Ingredients

  • All-purpose flour: 500 g

  • White wine: 200 ml

  • Extra virgin olive oil: 120 ml

  • Salt: 1 teaspoon

Method

  1. Mix everything in a bowl into a shaggy dough, then knead on the counter for 8 to 10 minutes.

  2. Pinch off a small piece of dough, roll it into a short rope and press the ends together into a ring (hearts count).

  3. Bring a pot of water to a boil and drop the taralli in one at a time. When they float up, after a minute or two, lift them onto a towel.

  4. Bake on a lined baking sheet at 400 degrees F for about 30 minutes, until crispy.
